Beat eggs with a bit of Salt and pepper and set aside. Put your pan on high heat. Meanwhile mash the Avocado with Salt and pepper, lemon juice, garlic and tabasco sauce. Put your toast on. Just before smoking point, add the coconut oil and swill it around the pan so that it is properly coated. Add the eggs quickly all at once. Move the eggs with a fork (or appropriate utensil), breaking it before it sets, just enough to let the liquid fill the breaks, then fold to cook through any remaining parts, you can remove it from the heat, and let it sit on the hot pan for a minute. Smother your toast in Peanut Butter then top with your spicy Guacamole. Add omelette to the top and quickly sit down to eat while it’s hot.
I like to have my coffee timed to be ready to wash it down with. And I love this as a quick and easy go to meal, full of good fats, the tangy guacamole cuts through the fat of the peanut butter, I’ve tried it with just peanut butter or plain Avo and it’s never quite as good.
